Also known as Hochheimer, Johannisberger and Rheingauer, Riesling is the classic cool climate grape and best known as the main wine grape of Germany Where possible, Riesling grapes are often allowed to become very mature before harvesting to maximize their sugar content and flavour intensity. Depending on harvest time and brix level, Riesling can range from a near clear, quite sharply dry wine to golden yellow and very sweet.
