Ripe. Pinot Gris grapes ready to be harvested. Also known as Tokay or Tokay d'Alsace, the Pinot Gris is a light red grape that is used to make white wines. The grape skins are removed before fermenting to prevent the wine from taking on a red hue. Pinot Gris can produce wines ranging from dry to very sweet depending on its sugar content at harvest. Its sweetest forms, typically labelled. Tokay, can be kept to a great age and are among the few wines that do actually improve with age.
